Brown Sugar Garlic Glazed Chicken

Lean meat and produce are the way to go with Weight Watchers. The protein from the lean meat will fill you up and keep your satisfied for the long haul, so chicken is a smart choice. The problem is that eating chicken everyday can get old after a while. The trick is to create lots of unique options by using a variety of spices and other ingredients. This recipe provides a new simple way to enjoy your chicken. The winning combination of garlic and brown sugar in this recipe create a sweet glaze that I think you will love.

All of the recipes I have shared this week from the “Comfort Food Favorites” eCookbook have been simple recipes that you could almost do off of memory later. Three simple ingredients make this chicken what it is, and you probably already have them in your kitchen. If you have olive oil, garlic, and brown sugar you can make this chicken.

Okay, I have to be honest though.

I had kind of a “Pinterest fail” moment with this chicken. You know when someone goes through a lot of trouble to get just the right lighting and backdrop and their picture is really beautiful so it gets shared thousands of time on Pinterest? And then you know when you try to recreate the masterpiece in your own home and it doesn’t resemble the masterpiece?

Yeah.

That was me with this recipe, so I have to show you because it just doesn’t feel right not to. I wanted you to see the picture in the eCookbook because it seems wrong to just post a really terrible picture, but I also wanted to show you mine, because it seems equally wrong to only show Martha’s stunning picture. You know what I mean. So here you go… my “Pinterest” (cookbook) fail…

So, there you have it. My amateur photography at its worst.  Hey! At least it tasted good! 🙂

Here is all you need for this recipe:

• 2 teaspoons olive oil
• 2 tablespoons chopped garlic (I use jarred)
• 1/4 cup brown sugar
• 2 teaspoons water
• 4 boneless skinless chicken breasts (4 ounces each)
• Salt and pepper, to taste

Here is what you do:

1. Preheat oven to 450F degrees. Line a baking dish with foil and lightly coat the foil with cooking spray. Set aside.
2. Place the oil in a small nonstick skillet set over medium low heat. Add the garlic and cook, stirring constantly until fragrant, about 1 minute. Remove from the heat and stir in brown sugar and water. Set aside.

3. Place chicken breasts in the foiled lined baking dish. Divide the brown sugar garlic mixture evenly over the chicken breasts. Sprinkle with salt and pepper, to taste.

4. Bake, uncovered, until chicken is done, about 20 minutes. (Cooking time will depend on the size and thickness of the chicken.)

Makes 4 servings.
Each serving (1 chicken breast) is 3 WW FreeStyle Smart Points.

Martha’s extra tips for this recipe:

Variations:
This glaze would also be delicious on pork chops, turkey tenderloin, pork tenderloin or salmon.

Cook’s Notes:
Garlic and brown sugar combine to create a savory sweet glaze for boneless skinless chicken. Note: If your chicken breasts are larger than 4 ounces, you’ll want to cut them into 4 ounce pieces and pound them to an even thickness.

    Well, Martha gas grill marks on her chicken. Maybe she finished hers off on a grill pan. At any rate it looks yummy.

      Yeah, I think so too! 🙂 Martha takes better pictures to begin with, but it probably would have helped to use a grill pan at the end. Even after a year of working on pictures I still run into days where I look at my pictures, shake my head, and just think, “Oh well, that will have to be good enough for now.” 🙂 This was one of those nights. I still wanted to share the recipe because the chicken tastes good either way and I wanted to share my picture just to be transparent.

    I tried your skinny Salsa Joes last weekend and it was delicious!!!!!! I am going to try this recipe tonight. I am so thankful that I stumbled upon your Web page! I don’t feel that cooking is one of my strong areas, therefore I don’t like to cook that much so the fewer ingredients the better ?
