“These breaded pork chops are great!”

If you have been on Meal Planning Mommies much in the past you may have noticed that I love recipes that don’t require a ton of ingredients. I don’t like spending lots of money on ingredients I won’t use more than once so I figure you probably don’t either. I also like to keep things simple most of the time. Of course, some recipes really are worth the extra ingredients and time, but I try to keep a good balance with our meal plans, so you aren’t having to spend an hour on dinner each night and breaking the bank by the end of the week.
A delicious pork recipe that uses common ingredients.
Most, if not all, of the ingredients of the crispy crunchy yumminess are probably already in your kitchen. (see pic below of ingredients)
You can pair this with a Caesar salad or veggies. We ate ours with a broccoli, cauliflower and carrots mixture, but these pork tenders go good with anything and everything. Our kiddos loved dipping theirs in ketchup.
What will you eat yours with?
Here is what you need:
1-1/2 lb. lean pork tenderloin, all fat removed
3/4 cup dry breadcrumbs
1 teaspoon sugar
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
1 Tbsp. canola oil
2 large egg whites, lightly beaten
2 Tbsp. cornstarch
Here is what you do:
Preheat oven to 400°F. Spray nonstick spray, or oil, on a baking sheet.
Slice the pork into long, thin slices. If the pork is a thick cut sometimes I slice the pork in half or use a tenderizer to pound down the meat until it is thin. These particular pork chops I bought were already sliced thin. Be sure to cut off any visible fat from the pork.
In a shallow dish, stir together breadcrumbs, sugar, paprika, onion powder and salt. Drizzle oil over the top and use a fork to mix the oil in thoroughly.
In a separate shallow dish, beat egg white with a fork.
Drag the pork pieces through the cornstarch, coating both sides evenly. Coat the pork with the egg, and then the breading mixture.
Put the pork on the baking sheet. Bake 14-16 minutes, or until the pork is fully cooked.
Makes 4 equal Servings.
One serving is about 5 ounces of cooked pork.
One serving is 9 Green, 9 Blue, and 9 Purple Points.

Yummy! I would make this tonight if I hadn’t already planned Italian Shredded Beef Sandwiches and planned to stick to this week’s meal plan! Please put this in the mix soon! I loved the taste. I’ve been trying to figure out why it didn’t brown. Maybe forgetting the oil did’t help. Will be making this again.

Just wanted to let you know we loved these. In all my years of cooking I don’t think I’ve ever thought to bread and bake pork chops (actually, I’m not a big fan of pork). Left out the sugar and added garlic powder and pepper to whole wheat bread crumbs. Also, spritzed with Pam right before going in the oven. They were very tender and tasty! Thanks for the recipe.
