Baked Potato Bar with Weight Watcher Points+

My kids LOVED this idea! Back in May Sarah suggested doing a potato bar for dinner and I thought I would give it a try it and see how it went over in our house. The idea behind the potato bar is to set out the different toppings that your family might want on their baked potato on the table. Set a baked potato in front of each person, and then let them pile as much or as little of each ingredient on to their potato as they want.

Our kids were really excited to make their potato creation. Even our picky eater had fun with this one. He turned it into an art project heaping on a little bit of everything, but then he barely nibbled his, so I got to eat his!  So Yee Haw! Bonus potato for me! 🙂 These two crazy kids ate theirs up. Preston requested that I do this again sometime and I think I definitely will. Thanks for the idea Sarah!

For those counting… One medium sized baked potato is 4 Weight Watchers Points+. The nice thing about a baked potato is you have control over what goes on it so you could put 1/2 cup of salsa on it and it would still only be 4 WW P+ or if you top yours with sour cream, chives, shredded cheese, and turkey bacon it will still only be about 7WW P+!

So the question is, “WHAT DO YOU PUT ON YOUR BAKED POTATO?”

Here are some options we had on our table for our Bake Potato Bar along with the WW P+ for each topping.

Another idea that I wish I had thought of in advance was to buy or make chili because my husband and I love chili with our baked potatoes. Next time I am going to try to remember that.

One idea on there that I thought kids would love is the pepperoni pizza baked potato from www.Babbles.com, although I haven’t actually tried to make them yet myself. If you try them you will have to let us know what you thought of them.
