This is my new favorite meatloaf recipe! I have tried to make lots of kinds of meatloaf over the past several years. My mom never really made meatloaf growing up so I guess I always figured it was probably gross as a kid, but it really isn’t if you have the right recipe. Of course, the wrong recipe will turn you off to the idea altogether! One time I tried to make a meatloaf that was chuck full of vegetables and I was really excited to post it here on our site because it looked extremely healthy, and who doesn’t want to be healthy? …. but then I ate it… and it tasted terrible, so the recipe never made it on Meal Planning Mommies. (maybe it was all the mushrooms? I don’t know)
I have made several different kinds of meatloaf that WERE worthy of sharing. Three of the recipes I have tried that I liked were the Turkey Parmesan Meatloaf , the “Maxed out meatloaf” made with green purée, and the Southwestern Meatloaf. The Southwestern meatloaf was my favorite until I tried this one. My whole family agreed that this barbecue meatloaf is our new favorite meatloaf recipe! The sauce gives it a sweetness that you will love, and if you use a lean meat one serving is only 6 WW Points+ 8 WW Smart Points. Another thing I love about this recipe is how easy it is! 6 ingredients and less than 30 minutes in the oven is all you need to make this deliciousness. Pair it with some green beans and mashed potatoes and you’re all set. As with any meatloaf, if you can’t get your kids to eat it, slap some on a bun and call it a hamburger! 🙂
Here is all you need for this Meatloaf recipe:
1 pound 90-93% lean ground beef
1/2 c. barbecue sauce, divided
1/4 c. chopped onion
1/4 c. Italian-seasoned dry breadcrumbs
2 egg whites
1/4 tsp. pepper
Here is what you do:
Preheat oven to 375°F.
Combine meat, 1/4 c. barbecue sauce, onion, breadcrumbs, egg whites, and pepper in a large bowl. Mix well with damp hands.
Put meat mixture into a loaf pan. Glaze top with remaining 1/4 c. barbecue sauce.
Bake at for 25 minutes or until desired degree of doneness.
Makes four servings. One serving is worth 6 WW Points+ 8 WW Smart Points!
Update:
Bummer! The sugar in the barbecue sauces brings the smart points on this recipe up to 8 WW Smart Points per serving. This recipe still tastes delicious, though, so you should still try it!
