Steph’s Homemade Spaghetti Sauce over Zucchini Noodles

Gluten Free Homemade Spaghetti Sauce

Amazinsauce!  This is my good friend Steph’s homemade spaghetti sauce recipe. I walked into her kitchen one afternoon,  went straight to the pot of this amazinsauce that was simmering on her stove, took the lid off and said “What is this?! I need the recipe!” It smells amazing cooking in your kitchen and tastes unbelievable!

I always thought that making your own spaghetti sauce wasn’t worth the trouble, I was SO WRONG!  Not only is it cheaper to make your own sauce, but I make it in bulk and freeze the leftovers. So not only is it budget friendly, FREEZER FRIENDLY, it is also AMAZINSAUCE!

This sauce needs to simmer 2 plus hours in order for the flavors to meld nicely, but could also be made in 30 minutes if you are short on time. The recipe I have listed below is for 1 meal. I ALWAYS quadruple the recipe (at the suggestion of my friend, Steph) so that I have plenty for leftovers and to freeze. The second recipe I have posted is for a quadruple batch ( I highly recommend it!).

Steph’s Homemade Spaghetti Sauce

Amazinsauce! This sauce smells amazing cooking in your kitchen and tastes even better!
Ingredients
  • 1/2 lb hamburger
  • 1 diced onion
  • 4 garlic cloves or 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp pepper
  • 1 14.5 oz can petite diced tomatoes
  • 1 6 oz tomato paste
Instructions
  1. Brown hamburger with diced onion in a stock pot
  2. Combine garlic, salt, basil, oregano, pepper, diced tomatoes and tomato paste
  3. Cover and Simmer 2+ hours
  4. Put over gluten free noodles, zucchini noodles or regular pasta

Amazinsauce x 4! This is the quadrupled version so there is plenty leftover for freezing!
Ingredients
  • 1 1/2 lb hamburger
  • 1-2 diced onions
  • 4 tsp garlic powder
  • 3 tsp salt
  • 4 tsp basil
  • 2 tsp oregano
  • 1 tsp pepper
  • 2 – 28 oz cans petite diced tomatoes
  • 4- 6 oz cans tomato paste
Instructions
  1. Brown hamburger with diced onion
  2. Add rest of ingredients
  3. Cover and let simmer for 2+ hours
  4. Serve over zucchini noodles, gluten free noodles or pasta!

zuchinni noodles

 

 For the noodles I sometimes buy gluten free noodles, but lately have been making zucchini noodles. My husband bought me an awesome tool for Mother’s Day last year called “Vegetti”… vegetable-spaghetti. Get it?!  Yes, this is one of those “As seen on TV” gadgets, but I love it! You can buy it at Wal-mart, Target, Walgreens, Amazon etc. 

To make zucchini noodles it is so easy! First you make the noodles using the Vegetti, then I put them in a microwave safe dish with a little bit of water and cover. I cook the noodles for about 2 minutes and then they are done! I use a whole small zucchini for myself. The zucchini will shrink down and you will want to squeeze out some excess water before adding your sauce!
