Copy Cat recipes: Filet o Fish Sandwich and Baked Potato Skins

May 25, 2015 by Alisha Hughes

“Give me back that Filet o Fish, give me that fish! Ooooo!” Remember that commercial? You have probably heard of the commercial at least once in your lifetime. With over 800,000 views on youtube, 300,000 of those in just two weeks, it became a quick viral sensation in 2009. Why do I feel old all of sudden? Anyway, it was/is a catchy tune you can’t seem to get out of your head once you hear it. Truth be told, I didn’t even know they had a fish sandwich until that commercial, but they have been around since 1963. If you love the filet o fish sandwich at McDonald’s then the second recipe is for you.

If you enjoy the baked potato skin appetizer at T.G.I.Friday’s then you will like this first recipe. I have to share this video with you first, though, because I had never had T.G.I.Friday’s baked potato skins prior to making this recipe and now I am kind of wishing I watched this video before cooking these because I took out like ALL of the flesh of the potatoes which was kind of not right, so watch this and you will see what I mean:

Here is my picture, with too much potato flesh taken out:

And here is what a more accurate picture of what these are supposed to look like:

Isn’t that lovely? 🙂 Here are the ingredients and instructions if you want to make your own loaded potato skins…

Ingredients for Baked Potato Skins:

IMG_1493

10 baked potato halves
1 Tbsp. melted butter
Seasoned salt, to taste
3/4 cup shredded Cheddar cheese
5 strips of cooked and crumbled bacon
1 green onion, diced

What to do:
1. Preheat oven to 375 degrees.
2. Remove as much of the potato flesh as you can, leaving only the skins. I didn’t want to waste food so I used the “flesh” of the potatoes to make mashed potatoes to use later in the week. If you want an easy way to make mashed potatoes go here.

3. Brush potato shells with butter and season with salt.
4. Bake for 15-20 minutes, until crisp.
5. Remove and sprinkle with cheese, bacon, and onion.
6. Place back in the oven for 6-8 minutes, until the cheese has melted.
7. Serve with sour cream or ranch dressing.
