Confession Time.
This Meal Planning Mommy didn’t get around to meal planning this week. Yup.
It’s Tuesday and I am just now sitting down to plan out my week. This week Alisha posted her awesome Weight Watchers Meal Plan and it’s my week “off” from posting my meal plan.
So…. it just didn’t happen.
Want to know one of the first thoughts I had after waking up this morning? The panic of “What am I going to make for dinner!? When am I going to have time to go to the grocery store today? Do I even have time? What do I have in the pantry I can just throw together?”
It’s one of those weeks where three out of the six nights I would meal plan are filled with meetings or events and it’s just busy. But I shouldn’t let that keep me from meal planning for the other 3 nights we will be home for dinners this week.
So here I am. Tuesday morning. Cup of coffee and my meal planning mommies monthly themed meal plan calendar which I am SO GRATEFUL FOR because at least I have a semi-plan to start from! If you haven’t read my post on DIY Simple themed meal planning, it could help you kick start your meal plan as well!
As you can see Sunday and Monday have already passed and I didn’t have a plan “written” down. Sundays are our leftover days and since I made a pot of soup on Saturday, this was dinner for me on Sunday. Last night I had a homeschool co-op board dinner meeting and so I didn’t need to come up with a dinner plan because my husband and girls always use this opportunity to have some sort of pizza.
But today is Tuesday and according to my themed meal plan for the week it is “Turn on the Crock Pot Night.” Since we missed Mexican Night last night I think I will make beef tacos instead of a crock pot meal. I have all the ingredients and it really is almost as simple as doing a crock pot dinner! Our family can’t get enough of Mexican!
Here is the meal plan for the rest of my week:
Tuesday: Beef Tacos, Salsa and Chips
Wednesday: Eating at Church
Thursday: Throw Back Thursday Chili Mac (make this gluten free by using GF noodles and making sure your chili is gluten free!) We will also be carving pumpkins on this night and frying some doughnuts for dessert. Just take some gluten free biscuit dough (bisquick has a good GF one!), heat up oil in a pan and fry away! Roll in sugar and cinnamon and eat with apple cider.
Friday: Family Fun Meal- Our kids love Big Hero 6 & they really want to do it for a family dinner movie night. When trying to come up with a meal that goes with Big Hero 6 my kiddos said Asian food! So I am going to make orange chicken with rice and my husband and I will get some take out sushi as well!
Saturday: Chili, Hot dogs and Cornbread- This is our neighborhood block party! We will gather with neighbors before trick or treating and eat. Love that our neighborhood has block party!
This post is meant to encourage YOU! That some weeks THIS Meal Planning Mommy does NOT have it all together. Not AT ALL! If you are finding yourself having a week or month where things have been busy, little ones are sick or you are just off your game recognize that it is just a season. Life naturally ebbs and flows but don’t just sit and let it take you out to a sea of anxiety. Do something!
Take some time today to do one thing you KNOW would help your week go better. Whether that is meal planning, checking some things off your to-do list, spending time with family or friends or time seeking the Lord. I know just getting a meal plan written for the rest of the week will take away the “what’s for dinner?” anxiety and allow me to use that brain power for something productive!
