Week of February 9-16

I have a couple of bonus ideas this week that were inspired by Valentine’s Day which is Saturday! A fun breakfast idea, a muffin recipe that is super yummy, and a fun dessert idea. I would suggest you make whatever your man likes on Valentine’s Day (or your children if you celebrate with them) We will be going to a party this year, but I am posting the recipe we did on our girl’s weekend Saturday, so stay tuned. 🙂

Here’s my week:
Monday: Creepy Crawly Tuna Sandwiches
Tuesday: Bombalki
Wednesday: Country Bob’s Burgers
Thursday: Hash brown Quiche
Friday: Split Pea Soup
Saturday: Ham and Cheese Tortillas (from our girl’s weekend)
Sunday: Mexican Tortilla Skillet

SHOPPING LIST
Monday: Creepy Crawly Tuna Sandwiches
2 cans of tuna (you can see that I am not loyal to any particular brand.) 😉
Mayo
green olives, black olives, or you could even cut grapes in half.
hot dog buns
pretzel sticks
a few round tortilla chips (if doing the butterfly)

Tuesday: Bombalki
Frozen pizza dough, thawed.
Polish Sausage
brown sugar (light or dark does not matter)
1 can of sauerkraut, drained

Wednesday: Country Bob’s Burgers
2 lbs. Hamburger meat
8 Hamburger buns
8 Cheddar cheese slices
Country Bob’s sauce
Pineapple slices (I used pineapple chunks because it was what we had)

Thursday: Hash brown Quiche
3 cups frozen loose-pack shredded hash browns, thawed
1/3 cup butter, melted
1 cup diced fully cooked ham
1 cup (4 ounces) shredded cheddar cheese
1/4 cup diced green pepper
2 eggs
1/2 cup milk
1/2 tsp. salt
1/4 tsp. pepper

Friday: Split Pea Soup
1 small onion
1 Tbs. vege oil
4 cups water
1 can (14.5 oz) chicken broth
1-1/2 cups dried split peas, rinsed
1 cup cubed fully cooked ham
3 bay leaves
1-1/2 tsp. salt
1/2 tsp. dried rosemary, crushed
1/4 tsp. dried thyme
1/4 tsp. pepper

Saturday: Ham and Cheese Tortillas (from our girl’s weekend)
Vegetable oil for frying
6 flour tortillas (10 inches), quartered (we used wheat tortillas)
3 packages (6 ounces each) boiled ham (24 slices)
4-1/2 cups shredded cheddar cheese
1 cup picante sauce or salsa
Garlic salt
Sour cream and minced chives, optional

Sunday: Mexican Tortilla Skillet
1 lb. Cooked ground beef.
1 can tomato soup
1/2 cup cheddar cheese
1/2 cup salsa
12 flour tortillas (burrito size)
1/4 cup water
