Wednesday: Sweet and Sour Chicken with Steamed Broccoli

February 3, 2010 by mealplanningmommies 2 Comments

This is one recipe that I have made when entertaining guests, and it is always a hit… so make extra!

Sweet n Sour Chicken

Here is what you need for the chicken marinade:

1/2 C. brown sugar
1 clove garlic
3/4 C. vinegar
1/4 C. Soy sauce
1/2 C. water
2 tbl. cornstarch

(Not pictured)

1 lb Chicken breasts ( I use boneless)
Broccoli (fresh is best)
Rice to serve 4

Step 1: Mix all ingredients and pour over chicken in 9 x 13 baking dish

Step 2: Bake at 350 degrees for 1 hour, turning halfway through.

Step 3: While chicken is cooking, steam broccoli and rice.

Step 4: Serve chicken and broccoli over rice. We like to pour extra sauce over the rice and broccoli too.

This is a great, filling meal that is very simple and frugal!

Meal Serves: 4
Cost of Meal: $6
Cost Per Person: $1.50

Lori Smith e-mailed me with this great recipe that is very similar to the one in this post. She said she always gets rave reviews! Try it out:

“I have a very simple recipe that is similar to tonights and thought I would send it to you. I always get rave reviews when I serve it”

    ½ cup of soy sauce

    ½ cup of ketchup

    2 tablespoons of honey

4 chicken breasts (boneless or otherwise)

Place chicken in greased baking dish, mix all ingredients and pour over chicken. Bake on 350 for 20 mins each side, serve with white rice. Simple and easy

    Thanks for sharing, Lori!
