Meal Planning Mommies Spinach Feta Egg White Scramble. Just 3 Weight Watcher smart points.

I want to share with you my new favorite breakfast!

It’s simple and powerful. Simple enough to put together in just a few minutes and powerfully packed with the nutrition your body needs to keep you going strong all morning long. I literally could eat this for breakfast every single day and not tire of it, which is great because this smart breakfast is just 2 Weight Watchers FreeStyle Smart Points per serving!

A single serving breakfast idea. . . or not.

When I cook this I am the only one eating it so I am sharing how to make one serving, but this recipe is easy enough to double, or to increase to however many servings you need.

A breakfast that is quick and filling.

If you have been to my post about quick and easy breakfasts that are low in smart points then you know that I do not like to take a lot of time on breakfast in the morning. Of course, I don’t like feeling hungry all morning either. This recipe is an answer to both of these things. I can whip up this breakfast in just a few minutes and be comfortably satisfied for a few hours. I feel so good when I make this breakfast. I know you will too.

Are you ready to start your day off right? Give this Spinach Feta Egg White Scramble a try!

Here is what you need:

Cooking spray
1 tsp. garlic
1/2 c. egg whites
2-3 c. loosely packed fresh spinach
1 plum tomato
2 Tbsp. crumbled feta cheese
1/4 tsp. sea salt
1/8 tsp. pepper

Here’s what you do:

Spray sauté pan with cooking spray. Cook garlic about 1 minute.

Add egg white and scramble as it cooks, about 2 minutes.

While the egg is cooking, cut tomato into little pieces.

Move egg white to the side of the pan. Add spinach and move it around the pan allowing it to wilt, about 1 minute.

Add tomatoes, salt, and pepper. Mix everything together and allow to cook 1 more minute.

Mix all the ingredients together while cooking

Top with feta.

Serves: 1 serving
2 Green, 2 Blue, and 2 Purple MyWW SP per serving.
Ingredients
  • Cooking spray

Instructions
