Monday:Mouth Watering Black Bean Chili and Sweet Corn Bread

This recipe is seriously makes my mouth water just thinking about it! It is enough to feed a family of 6. You can always double the recipe and freeze some in individual portions to use at lunchtime or in a large portion for either dinner.

Tasty Green, Katie Brabson (pictured below), was with me when we ate it and her toddler son Samuel, ate 2 servings! He also told me last week that he wants me to make it again!

Here is what you need:

1 TB vegetable oil, 1 diced onion, 2 garlic cloves-minced, 1 lb ground turkey, 3 cans of black beans, 1 (14.5 oz) crushed tomatoes, 1 1/2 TB chili powder, 1 TB dried oregano, 1 TB dried basil, 1 TB red wine vinegar

Step 1:
In a stockpot over medium heat, add 1 TB vegetable oil and your diced onion. Cook the diced onion until it begins to look transparent.

Step 2:

Mince 2 cloves of garlic and add to the onion. If you don’t have a garlic press, you are truly missing out on what fresh garlic (as opposed to jarred) can do for your meals! I bought mine through Pampered Chef, but lots of places sell them now.

Step 3:

Add 1 lb ground turkey (if you don’t like ground turkey- you can add beef) to the onion and garlic. Continue cooking until meat is browned.

I wasn’t sure about using turkey because our family is a big ground beef family, but you couldn’t even tell it was turkey! It also gives you the added health benefits of a much leaner meat.

Step 4:


Add all the other ingredients to you stock pot: 1 TB dried basil, 1 TB dried oregano, 1 TB red wine vinegar, 1 1/2 TB chili powder, 1 (14.5 oz) can crushed tomatoes, 2-3 cans of black beans, I will definitely be using only 2 cans next time because 3 was a little much for my taste (you can also use a bag of black beans- which would be more economical! You need to read the directions on the back of the bag- soak them overnight, drain and then cook slowly the next morning).

Reduce heat to low, cover and simmer for at least 60 minutes.


Delish! Serve with warm sweet corn bread (recipe to follow)


Also great with cheese!

Sweet Corn Bread

This is going to become a staple corn bread in our house! While it is more expensive that the box mix, this is soooo much better! You really only spend $ on the sour cream. Once you have the corn meal, it will last you several corn breads!

Here is what you need:

1 cup flour, 1 cup cornmeal, 1/4 cup sugar, 1/2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt, 1 egg (slightly beaten), 1 cup sour cream, 1/3 cup milk, 1/4 cup butter (melted)

Step 1:

Combine all dry ingredients into a bowl.

Step 2:

Now mix all of your wet ingredients together.

Step 3:

Add the wet ingredients to the dry ingredients just until moistened.

Step 4:



Place in a greased 8 inch square baking dish. Bake at 400 degrees for 20-25 minutes.

Serve Warm!

This is the most delicious, mouth watering, so very moist cornbread ever!

Frugal Total (Chili and cornbread combined, does not include staples like eggs, milk, butter, flour, sugar etc.)

Cost for a family of 6: $9.50

Cost per person: $1.58

Not bad for a mouth watering, healthy meal for your family!

    Sarah,

    We are eating this at home tonight! Samuel has been asking for it and I just got a whole bunch of black bean on a super sale! I am not using canned so they are soaking now. Really glad you posted this today!

    Hey, just made this and did not have any meat. I used rice instead. It was darn tasty…so just know it can be used as a substitute!

    thanks for the rice comment, we have switched to eating only organic meat–which I will only buy when it is marked down or i have a coupon, so as a result I sometimes need to come up with more vegetarian versions of meals than I used to. But we’ll get to have this tonight with organic ground beef 🙂 (marked down&$1 coupon!)
    i’ve not commented before, but I am always lurking and printing off recipes-lol!

    Thank you for posting this! We are eating out of the pantry this month and I have just about everything for this recipe. 🙂

    Question: I don’t have any red wine vinegar. Do you think I could use apple cider vinegar instead? Or just leave it out?

    Hope we are getting back to you in time for dinner. YES! Apple cider vinegar is a great substitute for red wine vinegar. According to the cook’s thesaurus good substitutes include: white wine vinegar (very similar), balsamic vinegar, sherry vinegar, apple cider vinegar, or rice vinegar. Enjoy your dinner tonight!!     Thanks! I used apple cider vinegar and realized I didn’t have any chili powder so I used cumin instead. Also accidentally opened up a can of kidney beans instead of black so that’s in there too. We just started a vegetable garden this year so I used fresh basil and oregano.

    I realized I followed maybe half of your recipe! I’ll let you know how it turns out!
