Monday: Ellie’s Manicotti

My sister is visiting and she whipped up an incredibly easy Manicotti tonight for us.

Here is what you will need:
Manicotti noodles
Ricotta Cheese (15 oz)
Egg (2)
Mozzerella cheese
Canned or homemade marinara/meat sauce

Here is what to do:
Pat your little sister on the back for cooking and let her know you are proud of her!

Ok, ok, for real.

1. Boil your noodles, don’t overcook!
2. In the mean time beat two eggs in a bowl, stir in the ricotta cheese, add some oregano and mix it all together until creamy.

3. When the noodles are ready, drain and pour cold water over them. Stuff them real good!
4. Layer the noodles with sauce into a dish. Complete with shredded cheese and bake 30 minutes or so.

Serve with garlic bread and salad. We began with salad and bread just like at Olive Garden, and then served the pasta. This encouraged everyone to eat their greens!

    you do not have to cook the manicotti noodle. All you have to do is stuff them put a little of the sauce on the bottom of the pan so the noodles do not stick. Stuff the noodles (which is easier because they are still hard) and then cook the dish at 350 for one hour. also I do not like ricotta cheese so I use 8oz cottage cheese, 8oz cream cheese, parmesean cheese and 8 oz mozzerella cheese, with garlic and italian seasoning.
