HAPPY BIRTHDAY DR. SEUSS!
My son came home on Monday all excited to tell me about what they did at school that day. He and his class sampled green eggs and ham at library and he was surprised at how good it tasted. He said everyone in the class liked it except for one kid and than he requested that we make it here at home. So guess what we had for dinner last night? That’s right. We had green eggs and ham for dinner.
Did you know that March 2 is Dr. Seuss’ birthday?
Did you also know that many schools celebrate “Dr. Seuss week” this week or next with the children? It’s true. Perhaps you will want to celebrate Dr. Seuss with your kids in your own home. I decided to use my son’s excitement for green eggs and ham as an opportunity to teach him (and his sister) how easy it is to make scrambled eggs and ham.
First, let talk about cracking eggs. I remember the first time my mom let me try to crack an egg and I was afraid of getting the shells in the brownie mix. It’s just one of those things that everybody has to try eventually. Since we were going to crack seven eggs I decided it was a good time to let my kids get a little practice and it was a hoot! Let me tell you!

Here is all you need to make 5 servings:
7 eggs
1/2 cup fat-free milk
1/2 Tbsp. butter
2-4 drops green food coloring
12 oz. boneless ham steak
Here is what you do:
Whisk together eggs, milk, and 2-4 drops of green food coloring.
Right away it felt like a science experiment and the kids were ALL IN!
Melt butter on sauté pan. Add egg mixture to the pan and allow to cook for 2 minutes.
Meanwhile, chop the ham into little squares.
Add ham to another sauté pan. Cook over medium heat, allowing to slightly brown.
Go back to the eggs. Turn egg over with spatula, and mix until the egg is scrambled.
(Eeek. That picture. I would NEVER eat this if I didn’t know what is was, just sayin’. But the kids love it.)
Serve 1/2 cup eggs with 1/4 cup ham. (I put the hot eggs and ham from the sauté pans into bowls and told the kids how much would have to go on each plate to make 5 equal servings. Then I let the kids dish it out onto the plates. Even this was fun for them.)

My little guy decided it would be fun to eat his with toothpicks because that’s how they did it in school. A couple of bites later he was getting creative and the next thing I heard was, “Look mom! I made a sandwich!”
