Breaded Baked Pork Tenders-8 WW Smart Points

I have an easy recipe for you tonight that I think your kids will love. Most, if not all, of the ingredients of the crispy crunchy yumminess are probably already in your kitchen. (see pic below of ingredients) Pair this with a Caesar salad or veggies. We ate ours with mandarin oranges and green beans.

Here is what you need:

ingredients for baked pork tenders

1 pound pork tenderloin
1/2 cup dry breadcrumbs
1 teaspoon sugar
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
4 teaspoons canola oil
1 large egg white, lightly beaten
4 teaspoons cornstarch

Here is what you do:

Preheat oven to 400°F. Spray nonstick spray, or oil, on a baking sheet.

Slice the pork into long, thin slices. If the pork is a thick cut sometimes I slice the pork in half or use a tenderizer to pound down the meat until it is thin.

In a shallow dish, stir together breadcrumbs, sugar, paprika, onion powder and salt. Drizzle oil over the top and use a fork to mix the oil in thoroughly.

In a separate shallow dish, beat egg white with a fork.

Drag the pork pieces through the cornstarch, coating both sides evenly.

Coat the pork with the egg, and then the breading mixture.

Put the pork on the baking sheet. Bake 14-16 minutes, or until the pork is fully cooked.

Makes 4 Equal Servings

One serving is 8 Weight Watcher Smart Points.

Serves: 4 servings
