Turkey Club Salad with Creamy Peppercorn Dressing

This salad is so good! That’s all I have to say about this one. It’s delicious, and it makes a lot so you can set some of the salad to the side and put it in the refrigerator (without the croutons and salad dressing so you don’t end up with soggy croutons) and it will make a great lunch the next day!  Love me a good satisfying salad!

Here is what you need:

6 slices turkey bacon
½ c. reduced-calorie mayonnaise
¼ c. fat-free half-and-half
1 Tbsp. lemon juice (or 1 lemon)
1 tsp. Dijon mustard
¼ tsp. black pepper
8 c. lightly packed torn romaine lettuce
2 c. cubed cooked skinless turkey breast
10 cherry tomatoes
1 c. plain fat-free croutons

Here is what you do:

1. Cook bacon in nonstick skillet over medium heat until crisp, about 3 minutes. Transfer to paper towels to drain.

2. To make dressing, whisk together mayonnaise, half-and-half, lemon juice, mustard, and pepper in serving bowl.IMG_3387

 

Add romaine, turkey, tomatoes, and croutons. Sprinkle with bacon; toss until coated evenly.

Makes 4 servings.
One serving is 6 WW FreeStyle Smart Points.

Ingredients

Update:

This recipe went down in points!! This salad makes 4 servings. It used to be 8 Points+ per serving and now it is just 6 WW FreeStyle Smart Points per serving! This one is a keeper!!

    Man! Just started to rock week 4 of WWsnart points menu planner. You guys continue to impress myself and my daughter whom I cook for most days. The Turkey Club with CP dressing was simple yet amazing. Please keep posting meal plans. Your helping me to stay on WW! 🙂 only one meal was made that didn’t make our yum list. It was the black bean burgers.
