Crunchy Asian Mandarin Orange Salad

It’s time to lighten things up with a fresh salad! Mandarin oranges in a spinach salad with crunchy chow mein noodles that is perfect for these warmer days.

It happens every year. As the Spring weather hits us, we find ourselves wanting to be outside a little more and in the kitchen a little less. This is a good thing! I have been sharing some recipes this week that will get you in and out of the kitchen in a jiffy so you can get back to having fun. This salad can be whipped together in less than five minutes, because… get this… there is no cooking required. Yay!

Vegetarian salad… or not…

Left as it is, this Crunchy Asian Mandarin Orange Salad is vegetarian, but you can easily slip a little chicken into this salad for some added protein. Want to keep it vegetarian, but still pack in my protein? Just add in some extra peanuts or edamame.

Here is what you need:

2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon sugar
8 cups fresh baby spinach
1/4 cup canned mandarin oranges, drained
1/3 cup chow mein noodles
3 tablespoons roasted peanuts
2 green onions, sliced

Here is what you do:

Mix together oil, vinegar, and sugar in a small bowl.

In a large bowl mix together the remaining ingredients.

Toss vinaigrette mixture in with the salad.

Makes 4 servings.
One serving is 2 cups.
One serving is 5 Green, 5 Blue, and 5 Purple points.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sugar
  • 8 cups fresh baby spinach
  • 1/4 cup canned mandarin oranges, drained
  • 1/3 cup chow mein noodles
  • 3 tablespoons roasted peanuts
  • 2 green onions, sliced

Instructions

  • Mix together oil, vinegar, and sugar in a small bowl.
  • In a large bowl mix together the remaining ingredients.
  • Toss vinaigrette mixture in with the salad.
