What to do with that big bag of Potatoes you got for $.88

March 3, 2010 by mealplanningmommies 3 Comments

I got a big bag of potatoes for $.88. Steal of a deal.

I’ll show you some ideas of what you can do with a big bag of potatoes when you get them.

For whole week’s worth of recipe ideas you can go here.

Our most beloved recipe on our whole site is a potato soup you can cook in your crock-pot. You can get to that recipe here.

Here are a few different fun ways to cut and use potatoes…
(first, take a look at this heart shaped potato I got in my last bag) :0) Love it. It’s going to be a baked potato for husband today.

1. Sort through the bag, identifying and separating which potatoes will be used for what.
Cute little ones that are relatively the same size I use for making baked potatoes.
Big fat, strange shaped potatoes I use to chop up in a roast.2. Peel and cut potatoes for roast. Put in water to prevent from browning. These potatoes would also be great for “onion potatoes“.Get the rest of your roast started. Allow the roast to cook as you chop up the rest of your onions.
The others get turned into “fries” of some kind that can be frozen and popped into the oven and used with a meal later. These would also be great for Taco Tater Skins.
Peel and rinse your potatoes.
Here are some ways you can chop your potatoes to make french fries:
1. Using a knife. 2. Using a crinkle cutter. 3. Using a mandolin will make for perfectly shaped potatoes that will all be uniform in size, making cooking even for all the potatoes. 4. Using a apple peeler/corer/slicer will allow you to get the peel off, and cut into curly fries all at once. So many options… which one will you choose? Season, cook, and freeze in the same way that you froze the onions.
Other options for using up those spuds can be found by clicking on one of the links below:

so do you have to cook them before you freeze them? or just freeze them raw?

Mariet, great question. I always cook mine first. I went to ehow.com to get a more detailed version of how this process is done best. Hope this helps…

..cook, or partially cook, them first. The best method of freezing potatoes is to create the potato recipes that you want to have “ready-made” for your dinner table and then freeze the prepared, or almost prepared potato dish.

    Partially cooking method…
Start by peeling two pounds of potatoes. (or whatever amount you want to work with.) Cut the potatoes into 1-inch cubes for diced potatoes, into “french fry lengths” for French fries, or grate them for hash browns.

Next simmer the potatoes in lightly salted water until just tender. Drain well. Then spray a sheet pan with non-stick cooking oil and spread the partially cooked potatoes in a single layer on the pan. Place the pan of potatoes in the freezer and leave them there until they are solidly frozen.

Transfer the frozen cubes, fries, or grated potatoes to freezer bags or containers to use as needed. When you are ready to use your frozen potatoes, reheat them in simmering water and use in your favorite potato recipes including your favorite potato salad recipes.

To cook the frozen French fries, toss the frozen potatoes with 2 tbsp. of oil, place them in a single layer on a sheet pan and bake at 425 degrees until nicely browned (about 15 to 20 minutes). Turn occasionally. Salt and serve.
