Yesterday we shared a Mongolian Beef and Broccoli recipe from the SkinnyTaste cookbook and today we are sharing the Teriyaki-Glazed Grilled Pork Chops with Pineapple Salsa! I will still be sharing one more recipe from this cookbook later this week and then we will be using all of three of the recipes shared this week in our Weight Watcher meal plan on Saturday.

As a blogger who happens to share recipes, one major area for improvement that Sarah and I have both agreed we need to work on is our photography. Neither of us are photographers with fancy cameras. We’re moms just trying to get dinner on the table. Sometimes my pictures look like my kids took them for me…. in a dark alley… with a flashlight… in a really big hurry. So… I feel like in order to do this recipe any justice at all I MUST share the picture that is in the cookbook itself. Check out this deliciousness!!
Are you drooling yet? My husband said mine looked great too, and I think he was right, but between my pork chops being too small, my pineapple chunks being too big, and my poor lighting (among other things) my pictures turned out looking like this:
How about that pineapple!? (hee hee) Oh well! My whole family enjoyed this dinner. I hope yours will too!
Ingredients:
Pork Chops
1/4 c. pineapple juice
4 t. reduced-sodium soy sauce (or Tamari for gluten-free)
1 large garlic clove, crushed
1/2 t. grated fresh ginger
5 boneless pork loin chops (4 oz. each), trimmed of fat
Teriyaki Sauce
1 t. cornstarch
3 Tbsp. reduced-sodium soy sauce (or Tamari for gluten-free)
1/4 c. pineapple juice
2 T. dark brown sugar
1/2 t. grated fresh ginger
1 small garlic clove, minced
Pineapple Salsa
1-1/3 c. fresh pineapple, cut into ½-inch cubes (my pineapple chunks are too big)
1 fresh jalapeno pepper, finely chopped
2 T. finely chopped red onion
1 T. finely chopped fresh cilantro
Cooking spray or oil mister
To cook the pork chops: In a small bowl, combine the pineapple juice, soy sauce, garlic, and ginger.
Put the pork chops in a container and pour the marinade over them. Let sit for about 30 minutes.
For the teriyaki sauce: In a small bowl, whisk together the cornstarch and 3 tablespoons cold water until dissolved.
In a small saucepan, combine the soy sauce, pineapple juice, brown sugar , ginger, and garlic. Bring to a boil over medium-low heat and cook until reduced and thickened, about 4 minutes.
Add the cornstarch mixture and cook until thickened, about 2 more minutes. Remove the pan from the heat an set aside to cool.
This sauce right here is what makes this recipe so tasty!
Gina suggests that you could use this to marinade other meat as well,
like chicken or steak. It is seriously SO GOOD!!!
For the pineapple salsa: In a small bowl, combine the pineapple, jalapeño, red onion, and cilantro. Set aside.
Preheat a grill to medium-high (or preheat a grill pan over medium-high heat).
Remove the chops from the marinade, discarding the marinade. Oil the grill grates or spray a grill pan with oil. Grill the chops until no longer pink, 6 to 7 minutes per side.
Spoon 1 tablespoon of the teriyaki sauce over each chop in the final 30 seconds of cooking time.
To serve, put a chop on each of 5 serving dishes and top each with 1/3 cup pineapple salsa.

I see weight watcher points but what about other nutritional value? Calories if counting but not doing weight watchers.

Could this be put in the over as well?

Hi Lacey, Gina doesn’t leave any instructions for baking this recipe in the oven but I am sure you could. Pork chops usually cook for 15-19 minutes in a 400 degree oven. Hope this helps!
