Stir-Fried Pork with Vegetables-4 WW Points+

You can change up this pork stir fry recipe by adding whatever vegetables you like and serve it over basmati or jasmine. We ate ours without rice and it was good that way too. Without the rice this recipe is just 4 WW Points+

Ingredients

2 tsp. olive oil

1 large onion, chopped
2 cups broccoli florets
1/4 cup water
1 red bell pepper, seeded and cut into 1-inch pieces
1 small zucchini, halved lengthwise and cut into 1-inch pieces
1 cup sugar-snap peas
10 ounces lean boneless pork loin, cut into 1/4-inch strips
1 tsp. thyme leaves
1/4 tsp. salt
Pinch freshly ground pepper
1 Tbsp. white-wine vinegar

Directions

Heat the oil in a nonstick skillet.

Add the onion and sauté until softened. Add the brocolli and water, then cover and cook until the broccoli is tender, about 5 minutes. Stir in the bell pepper, zucchini, and peas, then cover and cook until the bell pepper is tender, about 2 minutes longer.

Add the pork, thyme, salt and ground pepper to the vegetables. Sauté until the pork is browned, then stir in the vinegar. Cook, stirring, until the pork is cooked through, about 2 minutes longer.

Ingredients

  • 1/4 cup water
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 1 small zucchini, halved lengthwise and cut into 1-inch pieces
  • 1 cup sugar-snap peas
  • 10 ounces lean boneless pork loin, cut into 1/4-inch strips
  • 1 tsp. thyme leaves
  • 1/4 tsp. salt
  • Pinch freshly ground pepper
  • 1 Tbsp. white-wine vinegar
Instructions
