Sloppy Tacos

I always love it when I stumble upon a meal that is easy to make and the entire family enjoys.

This is one of those meals.

Don’t let the name deter you. If you buy the right shells, the Stand and Stuff Shells from Old El Paso, these aren’t any messier than normal tacos. The name “Sloppy Tacos” comes from the fact that you are going to use sloppy joe meat instead of taco meat.

You can either buy gluten free sloppy joe sauce at the store and make it even quicker or you can make homemade sloppy joe sauce.

I chose to make my own because it really is so simple. Ready?

Combine: 2 cups tomato sauce, 2 TB tomato paste, 1 tsp dry mustard, 2 TB honey, 2 TB Worcestershire sauce, 1/2 tsp garlic powder, 1/4 tsp onion powder and salt & pepper to taste. Mix that with 1 1/2 lb browned ground beef and let simmer for 15 minutes. Done.

So now that you have your sloppy joe meat made, let’s move on to the taco part! You really do want to buy the stand and stuff shells, it will make this a whole lot less sloppy. Take the shells out of the package and line them up in a 9×13 pan. Bake as directed on the package.

Take out of the oven and add sloppy joe meat. Top with shredded White American cheese (or cheese of choice) and put back in the oven for 5-7 minutes or until the cheese melts.

Serve.

Top with traditional taco toppings. My husband and I liked sour cream and a dash of hot sauce. Yum!

This was a fun meal to make and a fun meal to eat. My kids loved it and next time I will have to make a double batch because we ran out!

It’s such a simple meal to make and whips together in about 20 minutes. If you want to make it even easier next time, you can prepare the sloppy joe meat ahead of time and freeze. Then just defrost during the day, add to the taco shells and bake to heat up the meat and cheese!

If you are trying to cut back on calories/smart points you can leave out the ingredients/swap them out with vegetables…

If you leave out the taco shells and swap them out with lettuce to make a lettuce wrap you will save 2 smart points per taco.
If you leave off the cheese on each taco you will save an extra 1 smart point per taco.

 

Sloppy Tacos

Serves: 10 tacos
A twist on sloppy joes with sloppy tacos! Sweet and tangy tacos made with homemade sloppy joe sauce, a taco shell and taco toppings!
Ingredients
  • 1 1/2 lb 95%-99% lean ground beef
  • 1 tsp dry mustard
  • 2 TB honey
  • 2 cups tomato sauce
  • 2 TB tomato paste
  • 2 TB Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • salt and pepper to taste
  • 10 stand and stuff taco shells
  • 10 Tbsp. (5/8 cup) shredded cheese (I used white American)
  • sour cream, lettuce, salsa, extra toppings optional
Instructions
  1. Mix together the dry mustard, honey, tomato sauce, tomato paste, Worcestershire sauce, garlic powder & onion powder in a small bowl.
  2. Brown 1 1/2 lb ground beef and drain.
  3. Add beef back to pan and add sauce
  4. Stir and simmer 15 minutes
  5. While sauce cooks, heat up 10 stand and stuff taco shells in a 9×13 pan fro 5 min (follow package temperature directions)
  6. Once sauce is done simmering, add salt and pepper to taste
  7. Add a spoonful of sloppy joe meat to each taco shell and top with 1 Tbsp. cheese per taco
  8. Put back in the oven for the cheese to melt, about 5 minutes
  9. *Optional: Serve with sour cream, salsa, lettuce and other taco toppings.
