Sausage, Kale and Potato Soup

Sausage, Kale and Potato soup (A.K.A. Zuppa Tuscana) is a creamy, filling and savory soup. If you are a meat and potatoes kind of person, you will love this soup!

Please don’t let the kale scare you off. Give it a try. You can always start with less kale and work your way up. Believe me, my husband is not a vegetable

kind of guy, and this soup is one of his favorites!

Here is what you need:

  • 1 lb Italian Sausage
  • 4 russet potatoes
  • 2 garlic cloves
  • 4 cups chicken broth (make sure it is gluten free if you are gf)
  • 1 bunch of Kale
  • 2 cups 1/2 and 1/2
  • 2 cups of water

 

Sausage, Potato and Kale soup

Here is what you do:

Step 1: Chop Kale & dice potaotes (you don’t need to peel, just wash well)

Step 2: Brown Sausage in large pieces in a soup pot (don’t break it up all the way when browning)

Step 3: Drain Sausage and add back to pot

Step 4: Add 4 c. chicken broth, potaotes, 2 garlic cloves and 2 cups of water

Step 5: Boil and then turn down to medium heat and simmer for 15 minutes or until potatoes are done

Step 6: Add half and half & kale

Step 7: Add salt & pepper to taste

Step 8: Heat on low 10 more minutes (do not let boil)

Step 9: Serve!
