Since my last post everything has changed.
There is another child in my family.
We sold our suburban home and moved several hours away, into the country, onto a hobby farm.
I dyed my hair red.
Here on this little farm with my family I am laboring day in and day out, and I go to bed with a new kind of tired. But, this girl is home now. Home in my shoes. Home in my kitchen. Home on the farm .
This girl also made a salad. Not just any salad.
I made a salad that I pinned on my pintrest board over a year ago.
It almost felt like I had accomplished something amazing.
The ‘soft fruit’ garden is almost done for the season. It is nearly time to say goodbye to the cucumbers, peppers, and tomatoes. There has been abundance. Enough to can for the pantry, enough to cook with, enough to give away. How beautiful that is. That we can grow abundance. And, share it.
This salad was simple, but a power packed one. I served it for lunch. And, then when no one was looking I ate a whole bunch of it standing over the sink, madly shoveling it into my mouth.
Today we built a fence for the goats. And, I ate salad like one.
You could probably do this anyway you like. Salad is like a blank artist canvas. A little here, a little there and presto~ edible art.
This one had the following:
Spinach
Avocado
Tomato
Cucumber
Pumpkin seeds/Sunflower seeds
Feta Cheese
And, a few pieces of chicken from a previous meal. I tossed them in a little olive oil, warmed them up, and then added them to the salad.
My children at the salad plain. It almost did not even need a dressing.
I added a little Braggs Vinaigrette.
It was tasty the first time.
Then I helped put up a fence for my goats.
It was even better the second time.
