Salad Topped Pizza

February 14, 2018 by Alisha Hughes 2 Comments

Using 2-ingredient dought to make Salad Topped Salad

Doing a Salad Topped Pizza has been in my book of plans for a long time now. (Have I mentioned that I keep a book of ideas? Anyway, I do.) The way I was originally intending to make this recipe was going to be high in points, so I set the idea aside and forgot about it. Of course, since then, the WW FreeStyle program was created and now ground turkey is zero WW SP and 2-ingredient dough is every WW member’s new favorite magic trick, so the door of possibilities swung wide open, so here we are today!

Two-Ingredient dough… the greatest thing since sliced bread.

In case if you have missed it, the term “two ingredient dough” is referring to when a recipe uses self-rising flour and nonfat Greek yogurt to make dough. This magical combo is used now to make bagels, calzones, pizza dough, pretzels, bread sticks, cinnamon rolls, and basically anything else that requires dough. BOOM! It’s all over the Internet. Just do a search and you will find more ideas than you have time for. So, why not one more idea to add to the mix, right? MPM is officially adding to the collection of things to make with 2-ingredient dough, with our Salad Topped Pizza recipe that is just 5 WW SP per serving!

Let’s be honest…

This pizza doesn’t really look like pizza. (I mean, it’s more like a fancied up salad on some pizza crust) When my kids heard me say that I was making pizza for lunch my youngest got all excited. When he saw that my “pizza” looked more like a salad he was ready to high-tail it out of the kitchen. “Never mind! I don’t want pizza!” he announced.

(shock face! … not really… you gotta know this kid) Luckily for him, he was going to a birthday party that afternoon where they would be eating “real pizza”.

Anyway, my husband who is always willing to try my creations, but has been known to pick vegetables off of things at times, had this to say: “Well, that tasted better than I thought it would when I looked at it.”  (snort) This is my crew, and I love them!

How to know if this recipe is for you or not.

Okay, so I get it that this salad topped pizza is not for everyone. For instance, if you hate lettuce, red onion, tomato, ground turkey and Italian salad dressing, this recipe is probably not for you. If you are like me, though, and can gobble that stuff up you will definitely want to give this one a go! So, now that you know some of the main ingredients for this recipe, how about if I just go ahead and share the rest of the recipe with you?

Here is what you need:

ingredients for Salad Topped Pizza

1 cup nonfat plain Greek yogurt
1 cup self-rising flour
2 teaspoons Italian seasoning, divided
1 teaspoon garlic powder
1/2 cup reduced-fat Italian salad dressing, divided
1/2 tablespoon olive oil
1/2 red onion, sliced
1 pound 98-99% lean ground turkey
1/2 cup whipped cream cheese
3/4 cup reduced-fat shredded mozzarella cheese
1 small tomato, chopped
1 cup iceberg lettuce, shredded

Here is what you do:

Preheat oven to 375°F.

In a medium sized bowl, mix Greek yogurt, flour, 1 teaspoon Italian seasoning, and garlic powder until well combined.

Lightly dust baking sheet or round stone with self-rising flour.

Roll out dough on baking sheet or stone until it is as thin as you can make it without the dough tearing. If dough is sticking to the rolling pin, sprinkle a little flour on the dough and continue to roll it out (I was able to get my dough to roll out to a 12-inch circle, but it is okay if yours is not exactly 12 inches).

With a basting brush, lightly brush top of dough circle with 1 tablespoon Italian dressing.

Bake dough in oven for 12-15 minutes, or until dough is fully cooked and lightly browned on top.

While pizza crust is baking, heat oil in a large skillet over medium heat. Add red onion slices and cook 4-5 minutes or until crisp-tender. Remove onions from skillet and set aside.

In the same skillet, cook ground turkey with 1 teaspoon Italian seasoning about 6-8 minutes or until fully cooked, breaking up the meat as it cooks.

Beat together cream cheese and 3 tablespoons Italian dressing about 1 minute, or until it resembles the consistency of the cream cheese again. Using a spatula or the back of a spoon, spread cream cheese mixture over the pizza crust.

Top with cooked turkey. Sprinkle with mozzarella cheese and top with lettuce, tomato and red onion. Sprinkle top of the pizza with the remaining 1/4 cup Italian dressing.
