Mexican Tortilla Skillet

Weight Watchers friendly Mexican Tortilla Skillet - Just 5 WW SmartPoints per serving - on Meal Planning Mommies

This meal is perfect for a quick, frugal family dinner. The flour tortillas are cut into little squares using a pizza cutter and then cooked into a sauce made up of ground turkey, tomato soup, salsa, and a little water. The result is soft dough-like squares that taste similar to pasta. I asked my kids what they thought the tortillas were (without telling them they were tortillas), and they thought it was some kind of noodle and said that it tasted like ravioli. What kid doesn’t love ravioli?

I love this stuff! I hope you do too!

Add-ins you might like.

This recipe goes great with corn! We served our corn on the side, but you could also toss some in as it cooks. For some extra fiber, you could also add some canned black beans that are rinsed and drained. The cheese melted on the top is optional.

About the tortillas I used.

If you have been following Meal Planning Mommies over the past month, you have probably seen me write about low point tortillas. My favorite kind, and the kind I love to use now that I know they exist, are mentioned in this recipe.

My new fave.

The Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps are just 50 calories and 1 Weight Watchers Smart Point each! They are decked out with a ton of fiber and keep the carbs down, but most importantly, they taste fantastic! I just found them at the new Meijer where we live, but before that, I bought them on Amazon. You can check out our list of other low point tortillas, wraps, and flatbreads for more ideas if your store does not carry these.

If you do get the Olé Xtreme Wellness tortillas on Amazon, you will be happy to know that they freeze great! Just thaw them when you are ready to use them. If you forget to thaw them, like I did, you can just microwave them for about 45 seconds, and you’ll be all set!

Are you ready to make this simple, kid-friendly dinner?

Here is what you need:

Simple ingredients to make the Mexican Tortilla Skillet on Meal Planning Mommies

Cooking spray
1 pound 99% lean ground turkey
2 tablespoons Worcestershire sauce
6 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps
1 (10.75 ounce) can condensed tomato soup
1/2 cup salsa
1/4 cup water
1/3 cup reduced-fat shredded cheddar cheese

Here is what you do:

Spray a large stir fry skillet with cooking spray and set to medium heat. Cook ground turkey in the skillet and crumble as it cooks. Add Worcestershire sauce and cook it into the meat.

Cook the ground turkey with some Worcestershire sauce to give it more of a ground beef taste.

Meanwhile, using a pizza cutter, stack tortillas one on top of another and cut the tortillas into 1-inch strips. Do three at a time if you are having a hard time cutting them.

Use a pizza cutter to make cutting flour tortillas a cinch

Rotate cutting board and cut tortillas going the opposite direction as the step above, so you have 1 inch square tortilla pieces.

Cut tortillas into little squares using a pizza cutter
Mix tomato soup, salsa, and water in with the meat after it is fully cooked. Add in the tortilla squares, mix well, and allow to cook for 5 minutes over medium heat.

Cook ground turkey, tomato soup, salsa and water together

Add cheese on top and let cook until the cheese melts.

Sprinkle cheese and allow it to melt.

Ingredients
