Beef Tostadas

This one is for all the Taco Bell lovers out there! I know you’re out there, because you’re all hitting up my fast-food survival guide! 🙂

I’ll be honest. If I am ever having a really bad day and you want to cheer me up, just bring me a Taco Bell Mexican Pizza. For real.  Just ask my husband. I love those things.

The next best thing to a Taco Bell Mexican Pizza… this beef tostada, of course. It’s yummy, it’s simple, and it’s just 8 Weight Watchers smart points per tostada!

For a little added flavor, you can always use taco sauce or salsa, but we made it as described below.

Look out Mexican Monday, because Tostada Tuesday is taking over!

Update: Swap out ground beef for 98-99% lean ground turkey and these tostadas will be just 7 green, 6 blue, or 6 purple points each!

Here is what you need:

Ingredients for a perfect tostada

1 lb. 95% lean ground beef
1 medium red pepper, chopped (about 1 cup)
1/2 cup water
1 (1.25 oz.) taco seasoning packet
3/4 cup fat-free sour cream
6 tostada shells
3/4 cup canned fat-free refried beans
2-3 cups shredded lettuce
1-1/2 cup reduced-fat shredded Mexican cheese blend
Salt and pepper, to taste

Here is what you do:

In a large skillet, cook ground beef and chopped red bell pepper. Allow to cook over medium heat until beef is browned, stirring occasionally to break up the beef.

While the beef is cooking, start to prepare the tostadas. Spread 2 Tbsp. refried beans onto each tostada shell.

Add refried beans to the tostada

Top with shredded lettuce.

Add lettuce to the tostada

When the beef is no longer pink, add 1/2 cup water and taco seasoning packet to the beef. Allow to cook 5 minutes. Salt and pepper to taste.

Put 1/2 cup meat mixture onto each tostada and top with 1/4 cup cheese and 2 Tbsp. sour cream.

Delicious Weight Watcher Beef Tostada recipe

Makes 6 beef tostadas.
One tostada is 8 green, 8 blue, or 8 purple points or If you swap out the beef for ground turkey it will be 7 green, 6 blue or 6 purple points.
One tostada is 2 Tbsp. refried beans, lettuce, 1/2 cup beef mixture, 1/4 cup cheese, and 2 Tbsp. sour cream.

Serves: 6 tostadas
One tostada is 8 green, 8 blue, or 8 purple points.
Ingredients
  • 1 lb. 95% lean ground beef

  • 1-1/2 cup reduced-fat shredded Mexican cheese blend

Instructions

  2. While the beef is cooking, start to prepare the tostadas. Spread 2 Tbsp. refried beans onto each tostada shell.

    I’m new to your site, and so glad I’ve found you…I ‘ve been back on WW for over a year now, and needed a new inspiration on my meals.
