Shrimp on the Grill! This recipe is so easy, versatile and delish!

I found this recipe on Pinterest. If you are anything like me, when looking for a new recipe idea I go straight to Pinterest! I have my own personal pinterest account and we also have a meal planning mommies pinterest account (Find us on pinterest and follow… click on the side bar Pinterest icon!)

Sometimes I pin recipes and then forget about them! I also have the problem of trying recipes on pinterest, LOVING THEM, but then forgetting which board I pinned it. One pinterest recipe collecting tip I have for you is that create a “Recipe box-tried and approved” board. This board is for you to re-pin the recipes that you have tried and will definitely use again! This helps so much, especially when meal planning!  I would love to see some of your favorite pinterest recipes… get on there and share them with me through our meal planning mommies pinterest account!

Now for the recipe!

I bought a bag of large frozen shrimp from Aldi for around $6. I used the entire bag and it fed my family of 5 (granted my 3 kids are young and eat as much compared to 1 adult). This gave the kids one skewer of 4 shrimp each and mom and dad 2 skewers of 4 shrimp each. If you think you may need more shrimp, buy two bags!

Lemon Butter Grilled Shrimp

(adapted from http://www.sussle.org)

Ingredients:

Large shrimp (amt. is dependent on how many you want)

4 lemons, sliced in wedges

salt and pepper to taste

1/4 cup butter, melted

1/4 cup fresh squeezed lemon juice

4 garlic cloves, minced

1/2 tsp dried oregano

1/2 tsp dried basil

Here is what you do:

1. Skewer shrimp and lemon wedges. I did a pattern of two shrimp, lemon, two shrimp, lemon.

2. Grill for 4-5 minutes or until cooked through

3. Mix up your lemon butter sauce. Combine fresh squeeze lemon juice, melted butter, minced garlic, oregano and basil.

4. When shrimp comes off the grill, baste the skewers in the lemon butter sauce.

5. Serve!

I paired our shrimp with a broccoli and carrot mix. This would also be great on top of rice!

Enjoy!
