Air Fryer Shrimp Egg Rolls

If you weren’t sure if air fryers were awesome yet, try making these air fryer egg rolls and it will make you a believer. Trust me. An air fryer will make perfectly browned crunchy egg rolls look easy… because guess what… they ARE easy!

Easy peasy air fryer egg rolls.

I kept these egg rolls simple, but you can add or take away ingredients and still have similar results. All you have to do is sautè your stuffing ingredients, fill your egg roll wrappers with the inside stuff you like (for instance, you could leave out the shrimp or add chicken instead), roll them up and brush the outside with egg and then cook it in a preheated air fryer set to 390°F and cook them 3-4 at a time for 8-9 minutes. There you go! BAM! I just gave you the instructions to making egg rolls in an air fryer in one sentence. 🙂 I mean, yes, it was a major run-on sentence, but one sentence nonetheless. (Btw, did you know that nonetheless is all one word? It true! Nevertheless and notwithstanding are too! I am learning so much today.) Okay, enough goofing off. Let’s talk about these egg rolls…

YUM, right?!

One serving is 2 egg rolls.

I decided that once you eat one egg roll you are going to want another one, so I made one serving two egg rolls. If you eat just one egg roll it will be 3 WW FreeStyle SP and if you eat two it will be 5 WW FreeStyle SP, so that is another reason I decided to make one serving 2 egg rolls. You see, in the case of these egg rolls 1+1 does not equal 2. With these egg rolls, 1=3 and 1+1=5, which means you feel like you are getting a better deal when you eat 2 egg rolls for 5 Smart Points, instead of just 1 for 3 SP.

If I just lost you, don’t worry. You won’t need that kind of math for this recipe. 🙂

Here is what you need:

1 teaspoon toasted sesame oil
1 teaspoon fresh ground ginger
3 garlic cloves, minced
1 cup chopped carrots
1/2 cup sliced green onion
2 tablespoons soy sauce
1/2 tablespoon sugar
1/4 cup chicken or vegetable broth
3 cups coleslaw mix or shredded cabbage
10 large cooked shrimp, cut into small pieces
10 egg roll wrappers
1 egg, whisked

Here is what you do:

Heat oil in a large skillet over medium heat. Add ginger and garlic and cook for 30 seconds.

Add carrots and green onion to pan and sauté for 2 minutes.

Meanwhile, whisk together soy sauce, sugar and broth.

Mix in soy sauce mixture, coleslaw mix/cabbage, and shrimp to the pan of veges and cook 5 minutes.

Remove pan from heat and allow to cool for about 15 minutes and strain the liquid in a strainer.

As the coleslaw/vegetable mixture is cooling, preheat the air fryer to 390°F.

Place the egg roll wrappers on a work surface. Top each with 3 tablespoons veggie/shrimp mixture.

Brush some egg on the edges of the wrapper. Roll up the wrappers, folding over the sides so the filling is contained. Brush the egg on the outside of each egg roll right before you will be adding them to the air fryer. (If you brush the egg on the wrapper and let it sit too long the egg roll gets soft and can rip… I learned this the hard way… so just wait to brush the egg on the egg rolls until you are about to put them in the air fryer).

Spray the air fryer basket with cooking spray. Carefully add 3-4 egg rolls to the air fryer basket at a time. Brush tops of egg rolls with egg.

Air fry 8-9 minutes, or until brown and crunchy on the outside.

Serve immediately.

Makes 5 servings.
One serving is 2 egg rolls.
One serving is 5 WW FreeStyle SP.

Ingredients

    I plan to make these tonight. I plugged the nutrition facts into the WW app and it came out to 7 points per serving, not 5 as you say. But when I go through the ingredient list and tally up the points that way, I came up with 3 points per serving of 2 egg rolls. So now I’m thoroughly confused. What am I getting wrong? BTW, I’m on the WW Blue Plan. Thanks!
