Easy Chicken Parmesan with Basil- Weight Watcher friendly-6 FreeStyle Smart Points

We love Chicken Parmesan (or anything with cheese melted on the top of it really) in our house so when I saw that there was a Weight Watcher friendly version I knew I had to try it. This recipe comes from the “Weight Watcher 360° Family Style Cookbook” which claims to have “180 classic, scrumptious dishes everyone will love”. I think this recipe lives up to that claim.

Here is what you need:

3/4 cup low-fat buttermilk
1 large egg white
2/3 cup whole wheat panko (Japanese bread crumbs)
4 (5 oz.) skinless boneless chicken breasts
1/4 tsp. salt
1 cup fat-free marinara sauce
8 basil leaves
4 (1/2 oz.) slices part-skim mozzarella cheese
1/4 cup chopped fresh basil
1 Tbsp. grated Parmesan cheese

Here is what you do:

Preheat oven to 425°. Spray 7 x 11-inch baking dish with nonstick spray.

Whisk together buttermilk and egg  white in shallow bowl or pie plate.

Place panko on sheet of wax paper.

Sprinkle chicken with salt. Dip chicken, one piece at a time, into buttermilk mixture, then coat with panko, pressing to adhere.

Place chicken in prepared baking dish and lightly spray chicken with nonstick spray.

Bake until lightly browned, about 10 minutes; do not turn. Top each breast with 2 Tbsp. marinara sauce, 2 basil leaves, and 1 slice mozzarella . Pour remaining 1/2 cup marinara sauce around chicken; bake until chicken is cooked through and cheese has melted, about 5 minutes longer.

Serve topped with chopped basil and sprinkled with Parmesan.

I served mine with cooked spaghetti noodles (for the kids and my husband), sauteed zucchini, and grapes.

Makes 4 servings.

One serving is 6 Weight Watchers FreeStyle Smart Points.
