5cupsbroccoli florets(approximately 1-1/2 large heads of broccoli)
1/4cupwater
1orange,juiced and zested
1/4cupbeef broth
1tablespoonsoy sauce
1tablespoonbrown sugar
1tablespooncornstarch,divided
1teaspoonminced garlic
1/2teaspoonfresh ground ginger
2green onions,sliced
1poundtop sirloin steak,cut into 1 inch cubes
1/2teaspoonsalt
1tablespoonextra virgin olive oil
Salt and pepper,to taste
Instructions
Place broccoli in a large microwave safe bowl. Add 1/4 cup water; cover bowl with a microwave safe plate. Microwave on HIGH heat until crisp-tender, about 4 minutes.
Using oven mitts, carefully remove plate, pointing the plate away from you since the steam will escape. Drain water from the broccoli.
In a small bowl, whisk together the juice from the orange, broth, soy sauce, brown sugar, 1 teaspoon cornstarch, garlic, ginger, and green onion; set aside.
Place the steak, remaining 2 teaspoons cornstarch, and salt in a gallon size zip-close bag and shake the bag to coat the steak.
In a large stir fry skillet, heat the oil. Add steak to the skillet and cook 4-5 minutes, flipping the steak until both sides are cooked; transfer steak to a plate.
Add broth mixture to the skillet and cook for about 3-4 minutes, or until it begins to thicken. Add steak and broccoli to the sauce, mix and cook for an additional 2-3 minutes, allowing the broccoli to soak up some of the juices.
Top with additional optional sliced green onion and orange zest. Salt and pepper, to taste.
