4(4 ounce) each boneless, skinless chicken breasts
2teaspoonsMrs. Dash Southwest Chipotle seasoning
Cooking spray
2tart apples,peeled and chopped
1jalapeño,seeded and diced
1/4cupsalted pistachios,shelled
2tablespoonsfinely chopped red onion
2tablespoonschopped cilantro
2tablespoonsred wine vinegar
1tablespoonfresh ginger
1teaspoonmaple syrup
1/2teaspoonsalt
Instructions
Rub chicken breasts with the Mrs. Dash seasoning. Spray a grill pan or skillet with cooking spray and set over medium heat. Add chicken to pan and cook 6-8 minutes on both sides, or until the chicken is fully cooked.
In a small bowl, combine the remaining ingredients.
Serve 1 chicken breast with approximately 1/3 cup apple salsa (more or less depending on the size of the apples).
