Ingredients
2tablespoonsflour
1/2teaspoonsalt
2tablespoonshoney
2teaspoonsliquid smoke
1/2tablespoonlemon juice
1/2teaspoonsmoked paprika
1garlic clove,minced
4(6 ounce) salmon fillets
2teaspoonsextra virgin olive oil
Instructions
In a shallow dish, mix the flour and salt.
In a small bowl, combine the honey, liquid smoke, lemon juice, smoked paprika, and garlic.
Coat top and bottom of the salmon fillets with the flour/salt mixture.
Use a basting brush, brush the oil on a large skillet or grill pan set over medium high heat.
Add salmon to the pan coated in oil, skin side down.
Using the same basting brush you used for the oil, brush the smoked honey mixture over the top of the salmon fillets.
Flip the fillets over and brush the skin side of the salmon with the honey mixture.
Allow salmon to cook 4 minutes. Flip and cook an additional 3 minutes.
This salmon goes great with a Spring vegetable mixture, such as zucchini, squash, red bell peppers, and onion. I just got a bag of frozen vegetables that I could cook in the microwave, and it was perfect!
