Scoop and spread 2 tablespoons salsa over each tortilla.
Top 1/2 of each tortilla with 6 slices of turkey each.
Place 1 tablespoon mushrooms over the turkey on each tortilla.
Sprinkle 3 tablespoons cheese over the turkey/mushrooms on each tortilla.
Fold tortilla over. Spray a large skillet with cooking spray and set over medium heat. Cook tortillas, one at a time, in the pan for approximately 3-4 minutes on each side, or until the tortillas are slightly browned and the cheese is melted.
Carefully, using a large spatula, transfer the quesadillas to a cutting board and use a pizza cutter to cut them into 4 triangles.
