Slow Cooker Southwest Pork Sandwiches
5 Green, 5 Blue, and 5 Purple points per serving.

Ingredients

medium green pepper

small onion
1/2
cup
salsa
2/3
cup
water

(1 ounce) package
reduced sodium taco seasoning mix
1-1/2
pound
lean pork chops
8
light buns
Instructions
Trim fat off of pork.
Mix together salsa, water, and taco seasoning.
Place pork in the slow cooker, and top with peppers, onion and the salsa mixture.
Allow to cook 4 hours on high or 8 hours on low.
Remove pork from the slow cooker and shred with 2 forks. Return to the slow cooker.
With slotted spoon, measure out 1/3 cup pork mixture onto bottom half of each bun.
Serve immediately.
