Simple Buffalo Shrimp Salad
5 Green, 4 Blue, and 4 Purple points per serving.

Ingredients

light butter
1/2
pound
medium shrimp

tablespoons
hot picante sauce
1
(16 ounce) bag sweet butter lettuce
1/2
cup
shredded or matchstick carrots
1-2
celery stalks
1/3
cup
reduced-fat blue cheese
1/2
cup
light blue cheese dressing
Instructions
Melt butter in a sauté pan set to medium heat. Add shrimp to pan and cook 2 minutes, coating shrimp with the melted butter. Add hot sauce to the pan and toss to coat the shrimp. Cook an additional 1-2 minutes.
In a large bowl, mix lettuce, carrots, celery, blue cheese, and blue cheese dressing.
Top salad with cooked shrimp and serve immediately.
