Ingredients
2teaspoonsextra virgin olive oil
1onion,chopped
1cupdiced carrots
1cupsliced celery
1garlic clove,minced
8cupsfat-free chicken broth
1poundboneless,skinless chicken breasts, chopped into small pieces
1cupstar-shaped pasta (pastina)
Parsley(optional)
Instructions
In a large stockpot, heat oil. Add onion, carrots, and celery; cook 2-3 minutes. Add garlic and cook an additional 30-60 seconds.
Add broth and chicken to the stockpot with the veggies; bring to a boil. Add pasta and cook 4-5 minutes, or until the pasta is tender. Sprinkle with parsley, if desired.
