Grilled Pork Chops with Sauteed Green Beans and Mushrooms

Ingredients
1/2
pound
green beans,
trimmed
2
teaspoons
dark Sesame oil,
divided

4 ounces boneless pork chops, trimmed of fat
1/4
teaspoon
salt
1
shallot,
chopped
8
ounces
mushrooms,
sliced
2
tablespoons
honey
2
tablespoons
soy sauce
2
garlic cloves,
minced
1
teaspoon
dried oregano
1
thin sliced green onion,
optional
1
tablespoon
fresh snipped parsley,
optional
Instructions
Bring a pot of water to a boil; add green beans, and cook until bright green and tender, about 5 minutes. Drain water.
Preheat a large skillet or grill pan to medium-high heat. Using a basting brush, coat the pan with 1/2 teaspoon Sesame oil.
Add pork to the pan and brush sesame oil on the top of the pork.
Sprinkle pork with salt. Allow to cook about 4 minutes on each side, or until fully cooked. Transfer pork to a plate.
In the same pan, add remaining 1 teaspoon sesame oil with shallots and allow to cook about 3 minutes, or until the shallots are softened.
Add mushrooms and cook about 6 minutes, or until the mushrooms are softened, scraping the bits from the bottom of the pan into the juices.
Mix in green beans, honey, soy sauce, garlic, and oregano and cook 2-3 more minutes.
Serve 3 ounces cooked pork chop with 1/4 of the green bean mixture. Spoon the remaining juices from the pan over each serving for additional flavor.
Top with green onion and parsley, if desired.
