Couscous and Chickpea Snack

Ingredients

chicken broth
2/3
cup
uncooked couscous

canned chickpeas,
rinsed and drained

plum tomato,
seeded and chopped
1/3
cup
reduced-fat crumbled feta cheese
1/4
red onion,
chopped (about 1/4 cup)

tablespoons
fresh parsley,
snipped
1
tablespoon
red wine vinegar
1
tablespoon
lemon juice
1/2
tablespoon
olive oil
1/8
teaspoon
salt
Instructions
In a medium saucepan, bring broth to a boil. Stir in couscous. Remove from heat, cover, and allow to sit 10 minutes. Fluff with fork.
Meanwhile, in a large bowl, mix the remaining ingredients.
Mix in couscous with the other ingredients and serve immediately.
Refrigerate any leftovers.
