Ingredients
1/4cupapricot preserves
1tablespoonlight butter
1tablespoonmustard
1pound96% lean ground beef
1/2teaspoonsalt
Nonstick spray
2green onions,sliced
Instructions
In a small saucepan set over medium heat, whisk together preserves, butter, and mustard; bring to a boil and then turn off the heat. Set aside 2 tablespoons of the apricot glaze.
In a medium bowl, mix the remaining apricot glaze mixture with the ground beef and salt. Scoop 1/2 cup of the meat mixture and shape into a thick oval patty. Repeat with the remaining meat mixture until you have four patties.
Place patties on a baking pan sprayed with nonstick spray or lined with parchment paper. Bake in preheated oven for 20 minutes.
Top meatloaves with the 2 tablespoons reserved apricot glaze. Place the baking pan back in the oven for 2-3 minutes.
Sprinkle meatloaves with green onion.
