Ingredients
1poundpotatoes(approximately 2 medium potatoes), peeled and cut into 1 inch pieces
Cooking spray
13ouncesmoked turkey sausage,sliced
1teaspoonextra virgin olive oil
1green bell pepper,seeded and cut into 1 inch pieces
1red bell pepper,seeded and cut into 1 inch pieces
1onion,largely chopped
1/4cupreduced calorie syrup
2tablespoonswater
Instructions
Place potatoes in a large saucepan and cover with water. Bring water to a boil, reduce heat, cover, and cook for 10 minutes, or until crisp-tender. Drain the potatoes.
While potatoes are cooking, spray a large stir fry skillet with cooking spray and set over medium heat. Add sausage to the skillet and cook the sausage 3-4 minutes on both sides. Transfer sausage to a bowl or plate and set aside.
Pour the oil into the same stir fry skillet you used to cook the sausage. Increase the heat to medium-high, add the bell peppers and onion. Sauté the vegetables for 5-7 minutes, stirring frequently.
Add the potatoes and sausage in with the peppers and onion. Toss the stir fry with the syrup and water, until all ingredients are coated with the syrup.
