Ingredients
1(10 ounce) can diced tomatoes with green chilies,squeezed and drained
1teaspoonItalian seasoning
1teaspoonsugar
1/2teaspoonsalt
4Laughing Cow Garlic & Herb cheese wedges
8sliceslight bread
4part-skim mozzarella cheese slices
1/4cuplight mayonnaise
1/2cupfresh spinach leaves
Instructions
Preheat skillet or griddle to medium heat.
Meanwhile, in a medium bowl, mix diced tomatoes, Italian seasoning, sugar, and salt. Be sure to squeeze out any liquid from the tomatoes.
Spread 1 cheese wedge each on 4 slices bread.
Top each of the 4 cheese-spread slices with 1/3 cup tomato mixture, 1 slice mozzarella cheese, 1 layer of spinach and another slice of bread.
Spread 1/2 tablespoon light mayonnaise on the top of the top slice of bread. Place sandwich, mayonnaise side down, on preheated skillet or griddle. Spread 1/2 tablespoon light mayonnaise on the top slice of bread. Grill until the bottom is golden brown, about 2-3 minutes.
Flip sandwiches and grill other side 2-3 minutes, or until golden brown. Serve immediately.
