Ingredients
3(5 ounce) pouches salmon
1(6 ounce) package herb-seasoned dry stuffing mix (I used Stove Top Savory Herb)
1cupfat-free chicken broth
1/2cupgrated Parmesan cheese
1/4cuplight mayonnaise
2eggs
1teaspoonlemon juice
1red bell pepper,chopped
2-3green onions,sliced

Instructions
In a large bowl, mix together all of the ingredients except for the cooking spray.
Cut 2 (foot long) pieces of aluminum foil. Fold each in half lengthwise. Place the foil strips in the bottom of the slow cooker, making an "X" that will allow you to lift the salmon loaf out of the slow cooker once it is cooked.
Trim the foil to be even with the rim of the slow cooker, if necessary, so the foil doesn't get in the way of the slow cooker lid.
Spray the slow cooker with cooking spray.
Place the salmon mixture in the foil-lined slow cooker and use the back of a spoon or spatula to push down the salmon mixture into an even salmon loaf.
Cook on LOW for 3-4 hours, or until a meat thermometer reads 160°F.
Turn the slow cooker off and let stand, uncovered, 10 minutes before lifting the salmon loaf out of the slow cooker. Using the aluminum foil, carefully lift the salmon loaf out of the slow cooker. Slice it into 8 even slices, about 4.75 ounces each.
