Bruschetta Pasta Salad

Ingredients

Creamette 150 rotini
▢
3-4
medium tomatoes,
seeded and chopped
▢
1/4
cup
fresh basil,
cut into thin strips
▢

tablespoon
extra virgin olive oil
▢

tablespoon
lemon juice
▢

garlic cloves,
minced
▢

teaspoon
salt
▢
1/4
teaspoon
pepper
▢

fresh baby spinach
▢

shredded reduced-fat mozzarella cheese
Instructions
Cook rotini pasta according to the directions on the package. Drain and rinse pasta with cold water.
While rotini is cooking, chop the tomatoes and slice the basil.
In a small bowl, mix together the extra virgin olive oil, lemon juice, garlic, salt and pepper to create vinaigrette.
Toss together the vinaigrette with the rest of the ingredients and serve 2 cups per serving.
