Heat 1 teaspoon olive oil in a large stir fry skillet set over medium-high heat.
Add ginger root and garlic. Allow to cook 30 seconds.
Add eggs to the pan. Scramble the eggs as they cook, about 1-2 minutes.
Toss in the broccoli slaw mix. Cook about 5-6 minutes, or until crisp-tenders. Transfer eggs and broccoli slaw mix to another bowl.
Heat remaining 1 teaspoon oil in the same pan you used for the eggs and slaw mix.
Add steak to the pan and cook 5-6 minutes or until fully cooked, tossing occasionally as it cooks.
Once steak is fully cooked, add the egg/Cole slaw mix back into the pan with the steak. Mix in the soy sauce with the other ingredients. Allow to cook 1-2 minutes, or until flavors are mixed.
Top with green onion.
