Cut chicken into thin strips, similar to the size of large french fries.
Mix panko breadcrumbs, Parmesan cheese, garlic salt and pepper in a shallow dish. Put the flour in another shallow dish, and the beaten eggs in another.
Coat chicken fingers with flour, and then eggs, and then the Panko breading mixture.
Lay coated chicken fingers in a single layer on a cookie sheet or large stoneware. Spray chicken with cooking spray.
Bake chicken in preheated oven for 15-20 minutes, or until the outside is crispy and lightly browned.
